andes-mint-brownies-memeAs a busy mom and author, I’m always looking for delicious recipes that are also quick and easy. When I first tried this recipe for Andes Mint Brownies, I knew it would become a regular Christmas treat at our home.

It’s not only delicious, but also fast and super-easy.

Here’s the recipe.

Andes Mint Brownies: 

1 Family Size Box Brownie Mix (plus everything you need to make the brownies)

1 Bag Andes Mint Baking Chips

Preheat oven as directed on brownie mix. Prepare brownies per package instructions. Immediately after removing the brownies from the oven, sprinkle the baking chips on top. Allow chips to melt. Then, once the chips have melted but BEFORE they harden, run a butter knife through the topping to create a swirl effect. Allow brownies to cool completely before cutting into them. (The baking chip topping will harden as it cools).

  1. I’ll skip the brownies and go straight for the bag of Andes Mint Chips. Didn’t know they made those, so I’m going to look for them in the store next time I’m there. Brownies are a year round favorite at my house. Now I can make them extra special now and then.

  2. My favorite Christmas treat is Fruitcake. Next favorite is Chocolate Covered Cherry candy. Christmas is about the only time those 2 are available. I make Fruitcake and I need to get that job done soon.
